Weighing the tannins
Measure the required amount based on the recommended dosage.
Example:
- Must or pre-fermentation: 5 to 30 g/hL.
- Red wine: 4 g/hL (See the correspondence table for your trials with the decision aid kit (click).
Preparation of the solution
- Dissolve the tannins in 10 to 20 times their weight in water or wine.
Recommended: Use warm to hot water (50-70 °C / 122-158 °F) for faster dissolution.
- Stir vigorously to properly disperse the tannins.
Rest and homogenization
- Let the solution rest for 15 to 30 minutes at room temperature for complete hydration.
- Stir again before use to ensure homogeneity.
Incorporation into the wine or must
- Slowly and evenly pour the solution into the moving wine or must (pumping over or active stirring).
- Ensure proper homogenization to avoid any local overconcentration.
Immediate use
Use the solution within 3 hours to avoid any risk of contamination.
